I’ve tested the AddOn:Transcoder and would like to get a license. But before doing that I’d like to know
whether or not the audio and video watermark will disappear by the time I’d change the test- with the new license key.

With the Trial or Developer Edition license, Transcoder AddOn has video and audio watermarks. With a perpetual or subscription license, there are no watermarks.
