Does the webrtc plugin for chrome/firefox support screen-sharing and if it does, am I able to select full-screen or specific windows?
Also will the plugins for chrome/firefox be open-source?

You will need to edit the sample WebRTC Preview code that comes after requesting access if this is possible. Link
You are free to edit this code anyway you like to suite your WebRTC needs.
